Who doesn’t like Fried Chicken? But frying chicken in the traditional manner can make for health concerns and take a long time to prepare it correctly. Solution, my Oven Fried Garlic Chicken. It is as good as it looks. Perfect for making and taking to the tailgate or picnic. When prepared ahead, tastes even better the next day! That's if you have any left.

George’s Oven Fried Garlic Chicken

Makes 8-10 pieces

1 whole chicken cut into 8 - 10 pieces, or pre cut from butcher

Juice of 1/2 fresh lemon 

2 cups flour, approximate

paper bag or food safe plastic bag

For The Chicken Rub

1 teaspoon each: dried basil, oregano, thyme, sweet paprika

1/2 Tablespoon garlic powder

Pinch of fresh ground nutmeg

Pinch sea salt and ground black pepper to taste

Combine all seasonings for chicken. 

Add seasoning rub to chicken coating each piece, then squeeze lemon juice over chicken. Cover and refrigerate for at least 30 minutes or overnight. 

Preheat oven to 425 degrees F.

Place half of flour in bag and add additional flour as needed. 

Place two pieces of chicken in the bag of flour at a time, close tightly and shake bag coating chicken evenly. Remove flour coated chicken with tongs and shake off any excess flour. Place flour coated chicken in a low-sided heavy gauge roasting pan. Repeat until all chicken has been coated with flour. Make sure chicken is not over crowed in roasting pan. See Tips. 

Place chicken in oven at 425 degrees F. for first 15 min or until chicken begins to color (you will smell aroma), then lower oven to 350 degrees F. for 30 - 35 minutes until golden brown or until done. Time depends on size of chicken pieces. 

After removing from oven, let chicken rest for 5 minutes and serve. 

Tips: 

- For crispy chicken, use a heavy gauge low sided pan (to prevent chicken from steaming). 

- Do not overcrowd chicken in pan, allow for air circulation.

- The oven baked chicken fries in its own fat. Using just breasts (white meat) does not oven fry as well due to lower fat content. For best results cook with a mixture white and dark meat that has a higher fat content.

- Trust the cooking times. Try not to open the oven door to peak at chicken while cooking. It will still be there. Each time you open the oven door the temperature drops in the oven causing chicken to steam. 

- To keep chicken crisp after cooking, place chicken on a wire baking screen until cool.

When it comes to making any type of flatbread pizza let imagination and the season rule your toppings. I love this Curry Chic Pea + Carrot style flatbread when there is a chill in the air. And, flatbreads are a great do ahead snack for holiday entertaining!

Curry Chic Pea + Carrot Flatbread Pizza

Makes four servings

For the Pizza Dough Recipe

For the toppings:

Cooked Chick Peas, pureed; Sweet Carrots, sliced thin + blanch—keep crisp; Sweet Onions, sliced thin; Leeks, split + sliced this; Garlic, sliced; olive oil

Mix all the above and add curry powder, thyme, coarse sea salt, and black pepper to taste. 

Drizzle top of dough with olive oil before baking. 

425 degree F. oven 5-7 minutes

Mix Dough and place in a bowl lightly coated with olive oil. Cover loosely with a towel or plastic wrap. Place in refrigerator overnight. 

Next day, pre heat *oven to 475 degrees F. 

Stretch out dough to a rectangular shape and cut into two pieces. Sprinkle a teaspoon of fine grind corn meal on the surface of a heavy gauge pizza pan or sheet pan. Place the two pieces of dough on the top of corn meal. Brush top lightly with olive oil. 

Place toppings in this order on dough; potatoes, onions, feta, olives and olive oil. Sprinkle slightly with sea salt and fresh ground black pepper. 

Bake for 8-10 minutes or until pizza flatbread crusts are fully baked. You can check for doneness by tapping on the edge of the dough with your finger. It will have a hollow sound when done.

In Hot Chocolate Caramel

The Christmas season is upon us, so a hot chocolate seems like a very appropriate beverage. Homemade hot chocolate is everyone's favorite, even us big kids. This is my spin on hot chocolate and has put smiles on many faces. Enjoy!

George's Hot Chocolate Caramel

Makes 6 Servings

1/3 cup pure cane granulated sugar

1/3 cup unsweetened good cocoa powder

1/3 cup water

8 caramel candies

6 cups milk (whole milk for best results)

mini marshmallows or whip cream

1 ounce brandy (optional)

In a large saucepan combine sugar, cocoa powder, and water. Cook and stir over medium heat until sugar is dissolved. Add candies and stir until melted. Stir in milk. Heat through. Top with brandy. Pour into mug, top with mini marshmallows or whipped cream.

WHITE TURKEY CHILI

What to do with all that turkey? You gave goodie bags away, but there seems to be so much left, still. Well, here are a couple great ideas beyond the old turkey-n-gravy sandwich, which isn't that bad either. My number one requested one-pot meal recipe is my White Turkey Chili. It's so easy to prepare; just give all the ingredients time to simmer; a spicy and a warm way to serve turkey. 

Chef George Hirsch White Turkey Chili

WHITE TURKEY CHILI

Makes six servings

1 Tablespoon olive oil

1 1/2cupsonion, chopped

1/4cup celery,  chopped 

1/2cupyellow bell pepper, chopped

1  Tablespoon jalapeño pepper, seeded and chopped

4cloves garlic, chopped

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon thyme

fresh ground black pepper

3cups cooked turkey or chicken, skin removed and chopped 

3cups cannellini beans, drained and mash 1 cup

3 cups chicken broth

1 cup frozen whole-kernel corn

4 Tablespoons chopped fresh cilantro

optional: 1cup half & half or low fat milk

Pre heat a large casserole pot to medium.

Add olive oil, onion, celery, yellow pepper, jalapeño, and garlic; cook for 5 minutes. Add cumin, chili powder and black pepper. Add turkey, 2 cups of beans, broth, corn and bring to a boil. 

Cover, reduce heat, and simmer 20 minutes. Add 1 cup mashed beans and half & half to the turkey mixture. Simmer, uncovered, 20 minutes or until mixture is thick, stirring frequently. Stir in chopped cilantro.

All Champagne, by definition, must come from vineyards in the Champagne region of France. This is a small region comprising three districts which include the towns of Reims, Troyes, Charleville-Mezier and Chalons. Prosecco, produced in the Veneto region of Italy is considered an everyday drink or sparkling wine. Unlike most Champagne it does not improve with age and should really be consumed within six months of the time it’s purchased, or within a year of bottling. It tends to be dryer than many Champagnes. A good Prosecco, is inexpensive and very drinkable; right for any occasion even breakfast.

Sgroppino Italian Cocktail

Chill 4-6 Champagne flutes 

2 cups chilled Prosecco (Italian sparkling white wine) 

2 Tablespoons chilled vodka 

1 cup frozen lemon sorbet 

2 Tablespoons half & half 

4 fresh strawberries, split for garnish 

4 fresh mint leaves 

Mix Prosecco, vodka, sorbet and half & half in blender for 1 minute. Pour mixture immediately into chilled champagne flutes. Top with berries and mint.
