Soup in a Minute

 Long slowly simmered soup is great, but what if you just don't have the time? Here's a favorite soup that can be put together in a blink when you have a few 'mis en place' ingredients from your pantry.

What is Mise en place? In a professional kitchen literally, 'putting in place' or 'everything in place', as all ingredients are set up and organized for preparation. 

 

Soup in a Minute
Recipe by George Hirsch | Makes 1 serving

 12 ounce reduced sodium low fat chicken broth
1/4 cup snow peas, cut into angle strips
1/4 cup spinach leaves, washed well and slightly chopped
2 Tablespoons cooked orzo or cooked brown rice
1 Tablespoon green onions, chopped
1 teaspoon fresh basil, chopped
pinch fresh grated nutmeg
fresh ground black pepper

Place the chicken broth and snow peas in a small pot. Bring to a boil. Add the fresh spinach, lower to a simmer. Add the cooked orzo or rice, basil, nutmeg, and black pepper. Simmer for one minute, uncovered and serve.
