If ever there is a time, this is it — farm-fresh ears of corn at your local farm stand or market this week. Buy extra to grill or roast; as leftovers, they are an ideal addition to many dishes. Cut leftover corn off the cob and use it in salads, salsas, soups, tacos, beignets, etc. Sufferin’ succotash - add grilled corn to lima beans and tomatoes. The charred kernels add a robust nutty flavor and an excellent texture. Fresh is where it's at. 

I am sure you have heard a version of this tale.

"My grandmother learned from a farmer how to cook the best corn, start the water boiling, run to the corn field, pick the corn, run back to the pot, cook the corn, and eat immediately."

A good tip is to stress freshness. But how good is this advice if you don’t know how to select sweet and juicy-tasting ears?

Here's The 411: When picking: The kernels should be smooth and plump, and the juice inside the kernel should appear milky. The kernels should not be too mature, soggy, and doughy. The corn is good when there is a slight browning of the silks, and it is cool to the touch, full of the tip kernels, and firmness of the unhusked ears.

I’m still trying to figure out why people husk their corn at the market and leave husks everywhere. I may have to ask why next time. It helps the corn retain its freshness by leaving the husk on until right before cooking. Ears of corn should also be chilled as soon as possible after picking to slow down the sugar in the corn, as it turns to starch. Think of corn like fresh whole fish; the ears should be firm, moist, and chilled. I suggest taking a cooler to the market for the ride home.

 - Begin by pulling the husks of the corn back, but do not remove them. Remove and discard the silk and then soak the whole cobs in a pot of cold water for 15 minutes.

- Preheat the grill to a medium temperature. 

- Remove the corn from the water and brush the kernels with olive oil. Before you re-wrap the corn in the husks, add a little caramelized garlic, chopped onion, nutmeg, and black pepper. 

- For a flavorful twist, try using herbs & spices such as cilantro, garlic, chipotle chili, and fresh lime juice. 

- Then, reposition the husks over the kernels and tie each ear with a piece of loose husk or twine. 

- Place the prepared ears of corn on medium heat, turning every 2 minutes. 

- After a couple of turns, place the corn husk on indirect heat or the top shelf of your grill and close the cover. 

- Allow the corn to roast for another 10 minutes slowly. 

- You will know it is done when you press a kernel and it shoots out its sweet liquid.

I am reminded it's spring because the calendar says it's so. But what do you do on those days when the weather says otherwise, like all this rain lately? I suggest bringing spring into your kitchen with ingredients that say spring flavor. What first comes to mind is asparagus. It's so versatile; you can steam, sauté, roast, and, if you must, fry it—preferably tempura. 

Some conversational tidbits to keep in your pocket for your next dinner party or in a packed elevator:

- Asparagus comes from the ancient Persian word asparag, meaning a sprout. The ancient Egyptians cultivated asparagus and dedicated it as an offering to numerous gods. It must have been considered significant back then. And the Romans have an expression, "Velocius quam asparagi coquantur" - meaning, faster than you can cook asparagus. 

In the 1890s, it was a rare and expensive vegetable in the United States, but cultivation helped tame the price. 

- It was inevitable that the asparagus should be considered an aphrodisiac given its shape, which an Elizabethan writer remarked 'manifestly provoked Venus.'’ 

Asparagus is a young edible shoot commonly known as a "spear." The spear rises from an underground stem called a "crown," which can produce spears for 15 to 20 years. Most asparagus is harvested in spring when it is 6 to 8 inches high and has tender, fleshy spears and tight, compact heads. Once it reaches maturity, the asparagus stalks become woody, and fernlike foliage grows from the heads, making them inedible.

Tips:

Although grown on quite a large scale and in many countries, asparagus is available in abundance from March to late June. There are over 300 varieties of asparagus, and only 20 are edible. 

They are divided into three main categories:

Green asparagus. This is the most common type of asparagus. It is harvested at a height of about 8 inches. 

White asparagus. Grown in the dark (covered with soil to keep it from turning green), white asparagus is harvested as soon as it emerges from the ground. Although more tender than the green variety, it tends to be less flavorful and is more expensive since more work is required to grow it. 

Purple asparagus: This variety has a fruity flavor and is harvested when only 2 to 3 inches high. 

How to buy asparagus:

Whether asparagus is thin or thick, choose them with firm, crisp stalks and compact, brightly colored heads with no trace of rust or softness. The bottom of the stalk should be moist when squeezed, not dry and woody. Avoid yellowish asparagus with soft stalks beginning to flower, as these are signs that it is old.

Store asparagus vertically in 1 inch of water in a container, stem-side-down, in the refrigerator.

Grilled Summer Squash with Thyme and Thai Basil

Summer's bounty from the farm inspired this salad, made with baby Yukon potatoes, colorful confetti of grilled peppers, eggplant, zucchini, sweet red, green and white onion & fresh dill. You can embellish this recipe by adding any grilled sliced meats or seafood.

Farmer's Grilled Potato Salad
Makes 8 servings

For the Dressing:
3 Tablespoons fresh lemon juice
2 Tablespoons olive oil
1 Tablespoon Dijon mustard 1 Tablespoon horseradish
4 Tablespoons fresh dill, chopped
1/4 cup mayonnaise 1/4 cup sour cream 1 teaspoon sea salt fresh ground pepper to taste

- Mix all ingredients in a small bowl. 

George Hirsch Farm Grilled Vegetables

For the Salad:
2 pounds Yukon, blue or red new potatoes - grill roast, or boil, cool—then chill in refrigerator overnight
1 each sweet white & red onions, sliced and grilled 6 green onions, trimmed and grilled
1 each: red, yellow & green bell peppers, split - grilled, and sliced 1 each eggplant, sliced and grilled1 each green and yellow squash, sliced and grilled1/4 cup olive oil
 4 Tablespoons fresh dill, chopped1 teaspoon sea salt fresh ground pepper to taste

George Hirsch Farm Grilled Potato Salad

Two days before serving: Cook potatoes. If grilling, slice or split potatoes in half; if boiling, leave whole. Cool at room temperature, then place in refrigerator. The day before serving: Cut potatoes into 1/2-inch pieces. Combine potatoes and dill in a large bowl. Add 3/4 of the dressing and toss well. Refrigerate overnight.  Grill vegetables for 2-3 minutes on each side. Brush with olive oil and top with dill, sea salt, and pepper. Cool at room temperature, then place in refrigerator. 

Day of serving: Mix the remaining 1/4 of the dressing in the potatoes. Arrange grilled vegetables on a platter with potato salad. Just before serving. Top with a fresh sprig of dill.

Food Safety Tip: Never put hot or warm food in the refrigerator. Chill to room temperature, and then place in the refrigerator uncovered. After food has become fully chilled, then cover.

The best salad is not complicated but made with the freshest possible greens and garnishes. Les Salades composées or mixed green salad can be made from an infinite list; the only consideration is freshness. But you say you bought it fresh. Just because you purchased from the fresh bin at the market does not guarantee the pick date. Consider the source and how far that head of lettuce traveled.

Sugar Snap Peas, steam for 30 seconds, shock in cold water

Mixed Mesclun Greens

Arugula

Red Kale

Sweet and Neat Cherry Tomatoes

Juice 1/2 lemon

1 Tablespoon Olive Oil 

pinch sea salt + a few sprigs of fresh mint leaves

Add lemon juice, olive oil, mint, and salt in a bowl. Mix well. Add all ingredients, toss, and serve immediately.

Just in time for Spring! Hard Neck Garlic, grown in the northeast and featured on GHL from Quail Hill Farm, located on the East End of Long Island, is a green garlic-like scallion. Scapes are slim, bright-green, foot-long shoots with a curled top that new garlic bulbs send up in Spring. Crisp and flavor-packed with an onion garlic-like taste. The scape growing season is very short, so you need to be on the lookout when available in spring.

So what to do with a garlic scape? Use in the same manner as you would use garlic or green onions. Chop and toss into sautéed vegetables, sauces, and grilled seafood. And, my favorite is chopped and used for making pesto.

Garlic Scape Pesto

makes one cup

1 cup Garlic scapes, washed, dried, and chopped 

1/2 cup packed fresh basil leaves, washed and dried 

2 Tablespoons pine nuts, chopped 

1 ice cube

3 Tablespoon grated parmesan cheese 

3 Tablespoon extra virgin olive oil 

Place garlic, scapes, and pine nuts in a food processor. Puree gently. Add ice cubes and basil and slightly grind. Do not over-grind too long, or you will actually be cooking the tender leaves. Add the olive oil and cheese and process until it makes a paste. Refrigerate until ready to use.  

Use for more than pasta. Scape pesto is a great addition to salad dressing, topping bruschetta, poultry, seafood, grilled seafood, and vegetables. 

Tips: 

- Use good quality extra virgin olive oil. 

- Great make-ahead dish for a work-week dinner crunch. Simply make the pasta and toss in refrigerated pesto sauce, top with grated cheese.
