It's All Greek For Me

Gyro- pronounced jear-ro, or yeer-o, or he-ro. If you pronouce it incorrectly, all is forgiven when said with a smile.

There is something to be said for the art of walking while eating. Or is it eating while walking? Now there are many other forms to this art which aren’t so safe, for example driving while eating. Although I have witnessed first hand - women who can eat, put on make up and text at the same time. Ok, we’ll pray for them, but lets get back to talking gryo.

In the US, gyro meat can consist of a few kinds of mystery meats that are pressed and formed. But, when in Rhodes, Greece I had the most delightful sliced, crispy and juicy shavings of meat in my gyro. I had the perfect opportunity to test my walk and chew without loosing a single drop of tzatziki on my white shirt!

My Greek gyro, was made with a warm pita, roasted and sliced mixed beef & pork, tomato, onion and topped with tzatzikisauce and fried potatoes. Other toppings may be added such as chick peas, olives, etc. depending on where the gyro is made.

This was a good snack to tie me over. My fresh Calamari and Mythos Beer awaited me at Cafe George, just down the street.

Holiday Snack

Roasting in New York City since 1886, A. L. As far back as 1945, generous Bazzini 4-pound Elephant Tins have supplied the best kitchens.

Need a great snack in under 1 hour? And- with no concerns about added holiday fat intake, like the usual snack mix with butter. Make another viewer favorite and most requested party snack is my seasoned spiced nuts recipe. My recipe, roasted in the oven with egg whites, that's sans the butter!

I’ve listed options to mix-in with the nuts if you want to put your own spin on my holiday snack. Oh, and BTW- it makes a great hostess/ host gift when wrapped up in clear cello bags with a festive ribbon.  

Spiced Nuts Recipe

Add any of the following to above make your own spin on Holiday Snack

1 cup dried cranberries
1 cup white raisins
1 cup Indian nuts, aka pinion, or pine nuts
2 cups mini pretzel sticks
1 cup wasabi nuts

(Not for me, but if you like a more sweet version, add)

1 cup chocolate or white chocolate chunks

Roasting Chestnuts

Memorable Rome moments. Hey- I smell roasted nuts. I think we should get some. Where is that aroma coming from? I turn the corner coming out of the Vatican and see chestnut vendors with their portable roasters everywhere, at the ready. I scope out the chestnut scene and feel-out who might be getting my business. I hurdle a slew of battery operated toy dogs and 'authentic fake' Prada Bags and approach the tidiest chestnut vendor operation on the corner to place my order. A few Euros later with parchment wrapped warm chestnuts in hand, we stroll through the streets of Rome with the perfect snack.

Roasting Chestnuts Recipe

Preheat the oven to 425 degrees.

Clean chestnuts and dry. Use a sharp paring knife to cut a small X into flat pointed tip end of each chestnut, or prick chestnuts with a sharp church key (can opener) fork to allow steam to escape, preventing them from exploding.

 Place chestnuts in a shallow roasting pan. Roast in oven for 15-25 minutes, shaking occasionally or until chestnuts are tender and shells peel easily. Chestnuts are enjoyed at their best when warm.

Tip: Roasting time is variable depending on freshness. Choose firm heavy, not hollow when buying.
