Honey Cream Baked Apples

George Hirsch October 24, 2025
Baked Apple 3.jpg

Eat it local. it's so good for you, especially when made by your local bees. Much like how wines differ in flavor according to where the grapes are grown, so does honey. The benefits, in addition to building your immune system and an all natural aid to outdoor allergies; honey is one of the most precious all natural sweeteners on the market.

Honey Cream Baked Apples

Makes 4 servings

chefgeorgehirsch.com | George Hirsch Lifestyle

4 medium Honey Crisp or baking apples

1/2 cup apple juice

1/2 cup raisins or dried cranberries

4 Tablespoons Greek yogurt

2 Tablespoons honey

1 Teaspoon orange juice

1/2 teaspoon fresh-grated orange zest

1 cinnamon stick or 1/4 teaspoon ground cinnamon

Pinch freshly grated nutmeg

8 Mint leaves/ 4 for garnish

Optional: 4 Tablespoons Homemade Granola

Preheat oven to 350 degrees F.

Put the apples, apple juice, cinnamon stick, and raisins in a small baking dish. Bake covered for 5 to 7 minutes, then uncovered for five additional minutes.  The apples are done when you can slide a knife easily through the flesh.

Mix yogurt, honey, orange juice, zest, four chopped mint leaves, and nutmeg.

Cut the stem end of the apples approximately 2 inches around and one inch deep, on an angle.  Save the tops to place back on after filling the apples.  Core the apples 3/4 through; do not core completely through the bottom. Fill the inside of the apples with the honey yogurt mix. Place the stem back on top of the apples. Top with a mint leaf and serve in a dish with raisins and juice from baked apples, plus a little homemade granola for crunch.

Official American Cookie

George Hirsch August 16, 2025
sag harbor bake shop web.jpg

According to MIT, America's most famous cookie was invented by Ruth Wakefield by accident. Ruth, a dietitian and food lecturer, and her husband Kenneth bought a tourist lodge named the Toll House Inn in Massachusetts, where she prepared home-cooked meals for her guests.

In 1930, using butter cookie dough, Wakefield was mixing a batch of cookies for her inn guests and was out of baker's chocolate. She substituted broken pieces of semi-sweet chocolate that were given to her personally by Andrew Nestle. She had expected the chocolate to melt and absorb into the dough to create chocolate cookies. But as you can imagine, Ruth left her with a butter cookie with bits of chocolate. She called her new treat "Toll House Crunch Cookies."

The 'chocolate chip cookies were an instant hit with her customers, and word of their popularity returned to Andrew Nestle. Nestle then went on to buy the rights to the Toll House name and to Ruth Wakefield's 'chocolate chip cookie’. For her name and recipe, Wakefield's compensation would be a lifetime supply of Nestle chocolate. I guess that's not so bad if you are a chocoholic.

Nestle printed the Toll House Cookie recipe on its package of bar chocolate that was scored for easy breaking. By 1939, Nestle began selling small chocolate morsels (aka - chips) in yellow bags. Of course, you know by now that the chocolate chip cookie has become the most popular cookie in America!

Hampton Baking Co Chocolate Chip Origional copy.jpeg

Here's my recipe + rendition of America's cookie. My cookie is a bit chewier and less cakey than the Tollhouse recipe. It also bakes a darker shade due to the dark brown sugar. After a hearty bowl of Leek and Onion Soup, share with friends and enjoy with a tall glass of ice-cold milk or my Stout Coffee Ice Cream Float.

George's Chocolate Chip Cookies

Makes about 40 cookies

chefgeorgehirsch.com | George Hirsch Lifestyle

2 cups unbleached, all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) lightly sweet butter at room temperature

3/4 cup granulated sugar

3/4 cup dark brown sugar, firmly packed

1 teaspoon water

1 teaspoon pure vanilla extract

2 large eggs, beaten

2 cups good-quality semisweet chocolate, chopped, or mini chips

Optional: 1/2 cup pecans, chopped

Preheat the oven to 375ºF.

Whisk the flour, soda, and salt together in a bowl. Cream the butter at low speed in another large bowl to lighten it a bit, then mix in the sugars and cream for two minutes. Add the water, vanilla, and eggs to the butter mixture. Stir in the flour mixture until combined, then fold in the chocolate chips and nuts.

Using two soup spoons, drop the cookies 2" apart onto two parchment-lined, nonstick, or greased cookie sheets. Bake for eight to nine minutes, rotating the sheets after four minutes.

Remove the cookies to a wire rack to cool, and repeat the process with the rest of the dough.

Late Summer Cobbler

George Hirsch July 19, 2025

A peach berry cobbler is one of my favorite desserts, especially during the summer when the fruit is at peak ripeness. This cobbler combines a variety of summer fruits, and the natural sugars from the soft, ripe fruit provide just the right amount of sweetness.

Baking it in a cast-iron skillet makes serving a breeze at any barbecue. With plenty of summer left, you'll want to make this delicious treat before the season bids farewell.

3/4 cup rolled quick oats

1/4 cup chopped pecans or walnuts

1/2 cup melted butter

Mix all sugars, flour, oats, and nuts. Pour in butter and mix until the topping looks like wet sand. Do not over-mix; the topping should have a lumpy consistency.

2 pints of Fresh Blueberries or mixed berries

1 loaf of pound cake, sliced thin

Best Chocolate Cake Ever

George Hirsch November 8, 2024

Simple solutions can give you the best results. Machines and gadgets are very important to many people, but I enjoy cooking when a simple whisk, spoon, or spatula does the job. This is the case with the Chocolate Torta recipe from my TV series George Hirsch Lifestyle episode, Old World Traditions. Enjoy.

I invite you to Subscribe to my You Tube Channel, enjoy + Like as you view

Mix by hand and bake. Forty-five minutes later you’ll be savoring this Italian Pastry delight!

Makes 12 servings

chefgeorgehirsch.com | George Hirsch Lifestyle

1 cup all-purpose flour

1/4 cup cornstarch

1-1/4 tsp. baking soda

1/4 teaspoon salt

1 cup unsweetened Dutch cocoa powder

1-1/4 cups granulated sugar

1 cup water

1/3 cup sweet butter, melted

1 egg, beaten

1 egg white, beaten into whole egg

1 teaspoon vanilla extract

Confectioners sugar

GHL Chocolate Cake 112 titled T.png

Preheat oven to 325°. Lightly grease a 9-inch cake pan and line with baking parchment paper; set aside.

In a small bowl, combine flour, cornstarch, baking soda, and salt; set aside.

In a large bowl, combine cocoa and granulated sugar until blended. With a wire whisk, beat in water, then melt butter, egg, egg white, and vanilla until smooth. Add flour mixture and beat until smooth. Pour into prepared pan.

Bake for 45 minutes or until a toothpick inserted in the center comes out clean. On a wire rack, cool for ten minutes in a pan. With a small spatula, loosen the cake from the sides of the pan. Remove to a wire rack and cool completely. Place on a plate and sprinkle with confectioner sugar and a dollop of fresh whipped cream. To serve, cut into small wedges.

Baking Tip:

This cake actually tastes better when baked and aged one day in advance. When making ahead, allow it to cool completely on a wire screen, then cover it tightly in an airproof container or place the baked chocolate torta back into the cake pan and wrap the top with film.

Chocolate Pound Cake →

George Hirsch June 19, 2024

This recipe is one of those cakes that gets better with age; meaning, it tastes even better the day after it is baked. You may not have access to Sag Harbor Rum for the simple syrup, so if you find yourself in a strange port, use a good quality rum.

Chocolate Pound Cake

Makes one loaf

chefgeorgehirsch.com | George Hirsch Lifestyle

 1 1/2 cups cake flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup sweet butter, room temperature

1 cup pure cane granulated sugar

3 eggs, beaten

1 teaspoon pure vanilla extract

1/2 teaspoon finely grated orange zest

1/4 cup unsweetened Dutch-processed cocoa powder such as Droste

1/4 cup boiling hot water

Preheat the oven to 350 degrees F.

Grease a loaf pan with butter. Line the bottom of the pan with parchment paper.

In a small bowl, mix cocoa powder into boiling water until smooth. Cool to room temperature.

In a separate bowl, mix cake flour with baking powder and salt.

Mix butter until softened at medium-high speed, about 1 - 2 minutes. Add the sugar and beat until light and fluffy, about 2-3 minutes. With the mixer on low, add the eggs, one at a time, and mix well after each addition. Scrape down the sides of the bowl after adding each egg. Add vanilla, orange zest, and cocoa mixture. Add the flour mixture and mix only until combined.

Scrape the batter into the prepared pan and smooth the top with a spatula. Bake on a center rack in the oven for about 50 - 55 minutes or until done. To test doneness, the cake will spring back when touched lightly with the index finger.

Remove the cake from the oven and place it on a wire rack to cool for about 15 minutes. Remove the cake from the pan and cool completely on a wire rack.

Slice pound cake, and serve soaked with rum simple syrup and with fresh whipped cream.

To make simple syrup:

1 cup water, 2 cups sugar, 1/4 cup of Rum, and 1 orange, cut into quarters

Place all ingredients into a saucepan. Bring to a boil and cook for five minutes. Remove and cool.
