Grilled Long Island Duck

Poultry like duck, lends itself to a highly seasoned marinade with it's rich full-flavored meat. What kind of marinade should you use with grilled duck? The two basic ingredients are an oil, such as olive oil and an acid, like orange pekoe tea and lemon with seasonings.

Grilled Breast of LI Duck with Iced Tea Marinade 

Makes 4 servings

4 Fresh LI Duck Breasts

1 Cup Iced Tea Marinade

For the Marinade:

4 Cloves Caramelized Garlic

1 Cup of very strong Sweetened Iced Tea w/ lemon

1 Tablespoon Balsamic Vinegar

1 Tablespoon prepared BBQ sauce

2 Tablespoons Olive Oil

1 Tablespoon Fresh Sage, Chopped

Fresh Ground Pepper

Marinate duck breasts overnight or two hours in refrigerator.

Pre heat a grill to high. Sear breasts for 2-3 minutes on each side on a high temperature, move breasts to a lower heat for 2 additional minutes and remove. 

Allow duck breasts to rest two minutes before slicing. 

Optional: Serve with Savory Slaw 

Asian Savory Slaw 

Makes 4-6 servings | From George Hirsch Living it UP! TV series

4 cups Savoy Cabbage, shredded fine

1 cup Red Cabbage, shredded

2 green onions, chopped

1/2 sweet online, shredded fine

1 carrot shredded

For the Dressing:

1/2 cup olive oil

2 Tablespoons cider vinegar

1 teaspoon sesame oil

2 Tablespoons honey

1 teaspoon soy sauce

1 teaspoon fresh ginger

3 cloves garlic, chopped fine

Mix all ingredients for dressing.

Add Savoy and red cabbage, onions, green onions and carrots.  Toss and allow ingredients to marinate in refrigerator for two hours. 

Toss and serve.
