Apple Pumpkin Crumb Muffins

Seems like yesterday I was driving home from the beach (OK, it was yesterday). But then I passed one of my local farm fields filled with pumpkins. So ready-or-not the season has changed. At home I can still enjoy the best of both seasons on the farm and all the goodness from the farm.

Autumn is one of my favorite food seasons. Here's my seasonal spin on the average apple muffin - add pumpkin and crumb. Great to take on-the-go too. Enjoy!

Apple Pumpkin Crumb Muffins

Makes 18 muffins or 9 x 13 coffee cake

For the crumb topping:

1/3 cup brown sugar

1/3 cup granulated sugar

1/4 cup flour 

3/4 cup oats, not quick cooking

1/4 cup chopped pecans or walnuts

1/2 cup melted butter 

Mix all sugars, flour, oats and nuts. Pour in butter and mix until topping looks like wet sand. Do not over mix; topping should have a lumpy consistency. Reserve crumb topping and prepare muffin batter.

Preheat oven to 350 degrees F (175 degrees C). 

Lightly grease 18 muffin cups or use paper liners.

2 1/2 cups all purpose flour; or 50/50 whole wheat flour

2 cups pure cane granulated sugar

1 1/2 teaspoons cinnamon 

3/4 teaspoon ginger 

Pinch allspice & fresh grated nutmeg

1 teaspoon vanilla

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs, beaten

1 cup can pumpkin puree

1/2 cup applesauce, or vegetable oil 

2 cups Green or baking apples, peeled, core and chopped into small pieces 

In a large bowl, add flour, sugar, cinnamon, ginger, nutmeg, vanilla, baking soda and salt. In a separate bowl, mix eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to until flour is absorbed. Add chopped apples. 

Add batter into prepared muffin cups 3/4 filled. Top each muffin with crumb mixture and bake.

Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

Banana Blueberry

Bananas are rich in vitamin B6 and are a good source of vitamin C, dietary fiber, and manganese.

Blueberries are an antioxidant superfood packed with antioxidants and phytoflavinoids (compounds that protect our bodies from stress). They are also high in potassium and vitamin C, making them a top choice.

My banana blueberry muffin recipe adds some tartness to a sweet banana muffin. It's also a great take-along snack that's better for you than reaching for a candy bar.

Banana Blueberry Nut Muffins

makes 10-12 muffins

For the Crumb Topping:

1/3 cup light brown sugar

2 Tablespoons all-purpose flour

1 teaspoon cinnamon

2 Tablespoons nuts, chopped

1 Tablespoon sweet butter

In a small bowl, mix together brown sugar, flour, cinnamon, and nuts. Blend butter in with a fork until the mixture is crumb-like.

For the Muffin Mix:

1 cup fresh blueberries

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/4 cups, about 3-4 large very ripe bananas, mashed

1/2 cup pure cane granulated sugar

3 Tablespoons honey

1 egg, beaten

1 teaspoon cinnamon

1/4 cup walnuts or pecans, chopped into 1/4 inch pieces

1 teaspoon vanilla

1/2 teaspoon grated orange zest

1/2 cup sweet butter, melted, or replace with part/ all applesauce

Lightly grease 10 muffin cups or line them with muffin papers.

Preheat oven to 375 degrees.  Recipe Directions are below.

ENJOY this EASY to MAKE HOLIDAY COOKIE

In a large bowl, mix flour, baking soda, baking powder, and salt. In another bowl, beat together bananas, sugar, honey, egg, cinnamon, vanilla, zest, nuts, and melted butter. Fold in the banana mixture by hand with a spatula into the flour mixture until just moistened. 

Place batter into muffin cups filling each cup to three-quarters full. Place a few blueberries, about 1 Tablespoon, on top of each muffin. Divide the crumb topping evenly over the top of the muffin batter.

Bake for 18 to 20 minutes. Check for doneness with a toothpick inserted into the center of a muffin; when a toothpick comes out clean or touched lightly, the muffin should have a slight resistance to finger pressure.

Who doesn’t like a good muffin? After all, once the recipe is mixed, it bakes in minutes and is ready to serve.

Tips: Using very ripe bananas (black) is the key to success with a banana muffin recipe. Save ripe bananas and freeze them in a plastic bag until you have enough to make a full recipe.

For a "lower fat" muffin, replace the butter in part or all with applesauce.

Banana Nut Muffins

makes 10-12 muffins

Optional: For the Crumb Topping:

Orange Cranberry Buttermilk Muffins

  • Dennis, Massachusetts was the site of the first recorded cranberry cultivation in 1816.

  • American recipes containing cranberries date from the early 18th Century.

  • Americans consume some 400 million pounds of cranberries each year. About 80 million pounds -- or 20 percent -- are gobbled up during Thanksgiving week.

  • Did you know that there are 440 cranberries in one pound? 4,400 cranberries in one gallon of juice? 440,000 cranberries in a 100-pound barrel?

Orange Cranberry Buttermilk Muffins

Makes 12 Muffins

For the Topping:

1/3 cup lite brown sugar

2 Tablespoons all-purpose flour

1 teaspoon cinnamon

2 Tablespoons nuts, walnuts, or pecans, chopped into 1/4-inch pieces

1 Tablespoon sweet butter

In a small bowl, mix together brown sugar, flour, cinnamon, and nuts. Blend butter in with a fork until the mixture is crumb-like.

For the muffin mix:

4 Tablespoons sweet butter, melted

2 cups all-purpose flour; or 1 cup all purpose & 1 cup whole wheat flour

1 Tablespoon flour for coating plumped cranberries, plus greasing muffin cups

2/3 cup light brown sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

**2/3 cup dried cranberries, plumped 

1 large egg, beaten

1 teaspoon pure vanilla extract

1 Tablespoon grated orange zest

1/3 cup fresh orange juice

*2/3 cup buttermilk

*1/4 teaspoon white vinegar, for making regular whole milk into buttermilk.

Add white vinegar to milk to make the buttermilk. Allow sitting 5 minutes to sour. 

Grease a regular size 12-cup muffin pan with butter and dust with flour, tap out excess flour; or use muffin cups liners.

Place baking rack in the center of the oven and preheat oven to 400 degrees F. Note: If using a dark-colored muffin pan, reduce the oven temperature to 375 degrees F. Dark colored pans absorb more heat while baking in the oven and become hotter and carry heat faster than light-colored pans. 

In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and orange zest. 

Add the liquid mixture to the flour mixture and stir until combined, about 10-12 strokes, to moisten the flour mixture. The mixture will still have some lumps. Do not over mix or the muffins will become tough when baked. 

Toss plumped cranberries in a fine strainer with about one Tablespoon of flour to lightly coat. Using a rubber spatula, fold in a 1/2 cup of the cranberries. Using an ice cream scoop or large spoon, place batter into muffin cups filling each cup to three-quarters full. Add remaining cranberries on top of muffins and divide crumb topping over muffins. 

Bake about 15-20 minutes, until muffins are golden brown. Check muffins half-way through and rotate muffin pan if the oven temperature is uneven. Test doneness with a toothpick inserted into the center of a muffin; or when touched lightly—the muffin should have a slight resistance to finger pressure.  

Remove from oven and allow muffins to cool in the pan for 10 minutes, then remove muffins from pan. 

**To plump dried cranberries, add 2 tablespoons of orange juice from recipe and heat in a microwave for 30 seconds; drain orange juice back into pre-measured 1/3 cup orange juice.

George Hirsch Muffin Mondays

I can think of a hundred ways to prepare carrots - but how about a recipe that enhances their natural sweetness? Think carrots for a Carrot Cake baked in convenient cupcake portions. Happy Monday and whatever you plan to celebrate this week. Cupcakes..muffins travel well.

Did I mention the delicious Cream Cheese Frosting? Enjoy!

Carrot Cupcakes aka Muffins

Makes about 2 dozen

2 cups all purpose flour

2 cups sugar

3 cups carrots, finely shredded 

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup applesauce

4 large eggs, beaten

1 teaspoon vanilla

1/4 cup chopped walnuts

Preheat oven to 350 degrees.  Line cupcake pans with paper liners.

Combine all dry ingredients in a large mixing bowl.  Add eggs, applesauce and vanilla. Mix at low speed for 30 seconds, scraping bowl constantly while mixing.  

Mix at high speed for 3 minutes, scraping bowl every minute.

Pour batter into cupcake liners until they are 2/3 full.

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pans, then move to wire rack to cool. 

Tip: Taste carrots before using. Use the freshest carrots possible, the sweeter the carrot the better the cupcake. 

Cream Cheese Frosting

Makes approximately 4 cups

1 pound Cream cheese, room temperature and softened

1/2 cup Butter, room temperature and softened

2 cups Confectioners Sugar, sifted

1 teaspoon Vanilla 

2 teaspoons Grated orange zest

In a medium bowl, cream together the cream cheese and butter until light and fluffy. Mix in the vanilla, orange zest and gradually stir in the confectioners sugar. Scrape bowl, mix two additional minutes.

Refrigerator after use.
