Melanzane al Pomodoro

Cooking Melanzane al Pomodoro is perfect this time of year when farms are abundant with eggplant and tomatoes. My Eggplant Sauce recipe does not include meat/protein in the ingredients, but feel free to add grilled sausage, chicken, or shrimp if desired. This is it if you are looking for an under-thirty-minute cook-to-table dish without compromising flavor for time. You can create variations on this recipe, which is very easy to do. 

This pasta sauce is served warm or chilled, added to a tube-shaped pasta.

George's Eggplant Sauce

Makes 4 servings

1/4 cup olive oil

2 cups eggplant, peeled and chopped

1/2 cup onion, chopped

8 cloves garlic, chopped

6 plum tomatoes, deseeded and chopped

1 red bell pepper, chopped

1/4 cup pitted calamata olives, chopped

1/2 cup white wine

1 cup chicken broth

1 teaspoon each dried basil, oregano, thyme, and hot pepper flakes

2 Tablespoons pine nuts

2 Tablespoons fresh basil

parmesan cheese to taste and fresh black pepper

Preheat a large nonstick saucepan  

Add half the olive oil, then eggplant, onion, garlic, tomatoes, and bell pepper.  Cook until light brown.  Add the wine, chicken broth, olives, dried basil, oregano, thyme, and hot sauce. Cook for 10 to 12 minutes.

Top with remaining olive oil, fresh basil, and pine nuts.

Excellent with a rigatoni or tube-shaped pasta.

Make your day a little sweeter with my Apple Pot Pie

Apple Pot Pie

Makes 2 servings or 4 if sharing

Ingredients

2 baking apples, such as Granny Smith or Gala 

1 egg, beaten well for egg wash

1 sheet of puff pastry (store bought) cut into 2 pieces. 

Butter, Brown Sugar, Graham Cracker or Cake Crumbs, Granola, Raisins, Brandy optional

Peel apples. Core apples 3/4 through, leaving the bottom intact.

Add 1 tablespoon of butter to the bottom of a small but deep heavy-duty casserole or cast-iron pan. I adapted a cast iron butter melting pot, the perfect size for an apple. 

Add 1 teaspoon of graham cracker crumbs or cake crumbs.

Add 1 teaspoon of brown sugar. Place cored apples on top of the sugar and crumbs.

Repeat, add on top of the apple—1 tablespoon of butter, 1 teaspoon of graham cracker crumbs, and 1 teaspoon of brown sugar. Top with 1 tablespoon of granola, raisins, 1 teaspoon of graham cracker crumbs, and 1 teaspoon of brown sugar.

Repeat until flavorings are 3/4 up the side of the pie dish. Finish with a teaspoon of maple syrup added to the top of the apple.

Optional: 1 Tablespoon of brandy, or apple or orange juice.

Cut a sheet of puff pastry into a 6 x 6-inch square. Lightly drape over the apple pie dish, allowing it to lightly hang over the inside. Repeat on the second apple pot pie. Cut excess dough about 1/2 of an inch below the top of the pot pie.

With the tip of a paring knife, “dock” (poke holes) the top of the dough to allow steam to escape during baking. Brush pastry lightly with egg wash, do not puddle.

Refrigerate pot pies for 20 minutes. The pastry should be cold when placed into the oven.

Preheat oven to 400 degrees F. Bake for 20 minutes until done. Allow to rest 5 minutes before serving or serve at room temperature.

Serve warm with freshly whipped cream.

Creamy Tomato Soup as seen on George Hirsch Lifestyle

COMFORT and GOODNESS in a bowl. Tomato soup contains vitamins E, A, C, and K, essential minerals, and antioxidants that can keep you healthy.

Plus, one of the most popular types of comfort food combinations is soup and sandwiches. And one of the most popular soup/sandwich combinations is tomato soup and grilled cheese. For my Vintage Classics episode on GHL, I prepared Creamy Tomato Soup and Grilled Cheese with farm-fresh bread, cured French ham, and aged cheddar. I combined a mix of fresh ripe San Marzano plum tomatoes and canned San Marzano tomatoes for the ultimate tomato soup. During peak harvest season, when there is a plentiful supply of fresh farm tomatoes, I would use all fresh, but during shoulder seasons, I will mix them with high-quality San Marzano canned tomatoes. 

Once all your ingredients are assembled, comfort can be achieved in about thirty minutes. Mmm Mmm, Good!!!

George’s Creamy Tomato Soup

Makes 6-8 servings

5 large ripe San Marzano Plum tomatoes, deseeded and chopped

2 Tablespoons Olive Oil 

1 medium sweet onion, chopped

6 cloves garlic, chopped

2 Tablespoons sweet butter

2 Tablespoons all-purpose flour

2-4 fresh basil leaves, torn into small pieces

2- 15-ounce cans of crushed San Marzano tomatoes

4 cups chicken broth

2 bay leaves

1/2 teaspoon each dried thyme, basil

hot sauce, sea salt, and pepper to taste

Optional: 1 cup half-and-half 

Preheat a large 4-quart soup pot.

Add olive oil, onion, garlic, and fresh plum tomatoes. Stir and sweat for 5 minutes over medium heat. Add the butter; when melted, add the flour, stir, and cook for 2 to 3 minutes. Add in the canned San Marzano tomatoes, stir, and simmer for 5 minutes. 

Add the chicken broth, bay leaves, thyme, and dried basil, and simmer for 5 minutes.

Add fresh basil and simmer for five additional minutes. 

Remove bay leaves and take the soup off the stove. For a creamier soup, use a food pulser and puree slightly, leaving a few chunks of tomatoes. Return to the stove, bring it back to a boil, and add the optional half-and-half. 

Lower the heat and simmer for 2 minutes.  

Add hot sauce, sea salt, and fresh ground black pepper to taste.

Served topped with crunchy croutons and a few drops of olive oil.

George Hirsch’s Cedar Plank Salmon

I've introduced the age-old art of hot smoking on wood planks for over twenty-five years in my TV shows and cookbooks. It's foolproof and quite impressive for entertaining, and as I say at the end of my show.."If I can do it, you can do it!"

However, this technique of cooking on planks is far from new. The Indians in the Pacific Northwest cooked on cedar and alder, a tradition done for many centuries, as all cooking was done on an open fire. Once you try it yourself, you'll see why.

Chef George’s Cedar Plank Salmon

Makes four servings

*1 cedar plank

One 1 1/2-pound salmon fillet

Juice of one fresh lemon

1 teaspoon each: thyme, rosemary, paprika, black pepper

3 Tablespoons olive oil

2 Tablespoons butter, melted

1 Tablespoon chopped fresh dill

1 lemon, sliced  

Soak plank in water to cover for 2 hours; drain.

Preheat the Grill to high.

Rub the plank with one tablespoon of olive oil.

Place fillets on the plank; season with thyme, rosemary, paprika, black pepper, dill, and lemon juice. Top with remaining olive oil.

Grill for 10-14 minutes on a covered grill for optimum smoke or until the fish is cooked. The thickness of the fillets will determine the final cooking time.

Before serving, top with fresh dill butter and serve with extra fresh lemon slices, or grill lemon slices along with salmon.

*Soak planks for at least 2 hours or more in cold water before you fire up the grill.

Make sure the grill is good and hot; this is key! Grilled cedar-planked fish takes on a wonderful smoky flavor. The plank will be charred, but the fish will be perfectly cooked. When opening the grill, if the planks do not fit up, spray the plank with water to douse the flame and immediately close the grill cover to reduce oxygen.

Note: Cedar plank should be untreated non-resin wood, no thicker than 1 inch.

Winter is a good time to take inventory of how many of these power foods you have on hand, restock and remind you to incorporate them into your daily diet. I also take this as a good opportunity to go through non perishables + canned goods to give to my local food pantry.

Roasted Veg

Almonds: good fiber, protein good for your heart. Go ahead and go nuts!

Apples: Vitamin C and soluble fiber and helps keep the doctor away.

Beets: rich source of folate as well as natural red pigments that may be cancer fighters; save fresh stems for salads for a double bonus.

Blueberries: big plant compounds to prevent chronic diseases. Toss in cereal and yogurt to get your day started right.

Broccoli: missed your O.J. today? Have a glass of broccoli; it’s powerhouse of calcium, potassium, folate, fiber, Vitamins A & C. 

Red Beans: excellent source of iron, magnesium, phosphorus, potassium, thiamin, and copper, low fat low cal source of protein and fiber. A complete meal with steamed brown rice.

Spinach: Vitamin A and C folate. Good source of riboflavin, vitamin B-6, calcium iron and magnesium. Boost your immune system and keep hair and skin healthy. Seemed to work for Popeye.

Salmon: Omega-3 fatty acids, aids in keeping blood from clotting, good source of protein. Need more reason, just try this tasty recipe for Grilled Salmon, Irish Style.

Sweet Potatoes: high in antioxidant beta-carotene which can slow the aging process. Good fiber, fat free, and under 60 calories per tuber.

Swiss chard: a leafy green vegetable packed with carotenoids that protect aging eyes. Sorry, the DMV still requires an eye test for drivers license even if you eat your Swiss chard.

Pumpkin seeds: the most nutritious part of the pumpkin. Full of magnesium; high levels of the mineral are associated with lower risk for early death. Helpful in the dugout during a Game Day too.

Sardines: high in omega-3’s, loaded with calcium. They also contain iron, magnesium, phosphorus, potassium, zinc, copper and manganese as well as a full complement of B vitamins. Enough said.

Turmeric: more than just a yellow color to paella, it contains anti-inflammatory and anti-cancer properties.

Wheat Germ: great boost to your immune system and cardio health. Go ahead treat yourself to an ice cream topped with wheat germ, you are doing yourself good. 

Vegetable Juice: when choosing, select a low sodium version because it’s filled with lycopene, an antioxidant that reduces risk of heart attack and prostate cancer.
