An often requested recipe from George Hirsch Lifestyle, it is ideal for every occasion. Enjoy as is or upgrade by topping with your favorite ice cream. The brownie derives its character from a deep rich cocoa base for the chocolate flavor.

George’s Double Chocolate Brownies

Makes 12-18 Brownies

2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 pound (2 sticks) sweet butter, softened at room temperature

2 cups granulated sugar

4 eggs, beaten

1/2 cup unsweetened cocoa powder

1 teaspoon pure vanilla extract

1 1/2 cups chopped pecans or walnuts

1 1/2 cups semisweet chopped chocolate pieces; or chocolate, or butterscotch chips

Preheat the oven to 350 degrees. 

Grease and flour an 8 x 12 x 2 inch-baking pan.

In a small bowl, mix flour, baking powder, baking soda and salt well. Set aside.

Cream butter in a mixing bowl until light and fluffy. Add granulated sugar, cream on high speed for 2 minutes, until light and fluffy. 

On a low speed add vanilla and eggs, one at a time, stopping machine to scrape down the bowl well after each addition. On a low speed add flour and cocoa powder to the butter mixture and mix just until flour is absorbed. Do not over mix. 

By hand, fold the pecans and chocolate in with a rubber spatula.

Optional: if using coconut; mix 3/4 of coconut with pecans and chocolate. 

Using a spatula, spread the batter into baking pan making sure the batter is spread evenly and smooth. 

Bake for 25-30 minutes. Caution to not over bake. Brownies are baked when pressed cakes springs back when pressed lightly with your finger or a toothpick comes out clean. Cool in the pan for 2 hours and cut the brownies into rectangle or square pieces.

Labor Day does not put an end to my summer, as an East End September is celebrated for it’s bounty of the farms and water. I've shared a window of inspiration of a few summer dishes I prepared on the land and water this past summer. I hope you keep the spirit of summer alive!

A couple of times a year you have watched my appearances on Telecare’s Real Food, Good News and annual telethon TV programs. During my on-air visits I often share recipes and current events in my life along with the good things my friends are doing in the community. Recently, Real Food came to visit me to tape an episode in the George Hirsch Lifestyle home studio kitchen (airing this fall). As usual, during the open of the show Monsignor James Vlaun makes my introduction; afterwards I thought it would be nice to introduce you to my long time friend and amazing man Father Jim Vlaun.

Msgr. Jim is the President and CEO of Telecare Television, the Catholic Television station of the Diocese of Rockville Centre, which broadcasts on TV and Online to millions of homes 24/7. Msgr has hosted many TV programs with top sports figures, other national prominent TV hosts, along with other venerated priests, rabbis, religious and lay leaders and most importantly the people in the community who make a difference in everyday life.   

Msgr. Jim has hosted Religion and Rock radio for 26 years! If you are a rock star you probably already know Msgr. He has hosted everyone from Billy Joel, The Stones to Jimmy Buffet. His radio program is nationally syndicated and airs every Sunday from 7 a.m. to 8 a.m. on WBAB-FM 102.3 or 95.3 on the East End. And Saturday evenings at 11pm on Sirius Satellite Radio channel 159 and XM Satellite Radio channel 117.  

In addition to his work on Television and Radio, Msgr. Jim serves as the Catholic Chaplain for the New York Jets. His ability to attract sports figures who are leaders in the community is nothing less than astonishing. In addition to NFL stars, during Telecare’s Annual Telethon you will see the studio filled with top sports legends from baseball to hockey. Be careful when walking by that guy with the hockey stick, it’s been autographed by every player on the team!  

He has authored three books, one titled Life, Love, and Laughter: The Spirituality of the Consciousness Examen. An easy read, and necessary for one’s walk in life. Msgr. integrates personal stories, situations, and his own struggles making this a touching inspiring work from the heart. And what would the host of cooking TV series be without a cookbook? What a cooking priest? Don’t let those vestments fool you, Msgr. could easily trade them in for a chefs coat, he knows his way around the kitchen! As I, he shares the belief that food is the common denominator and when breaking bread and we sit around the table there is bond of spiritual love like non other. Restaurant Hunter TV Pays a Visit

Two-time Emmy winner Rob Petrone, host of TV’s Restaurant Hunter took a road trip to the East End, aka the Hamptons see what exactly what George Hirsch Lifestyle is all about. What he found was exactly what you see on my public television series. We made a few stops at a couple of local sources for vegetables, cheese, seafood, meat, and wine. Next, with cameras in tow, we returned to my patio to grill and entertain George style, while chatting about how food has changed throughout my career as a chef. 

Afterward, we continued to eat, and sip on some local small batch cream soda, while Rob sought the reason why after 20 years of television filming all over the world I would film entirely in the Hamptons. My response, “this is how I was raised - the bounty of the eastern part of Long Island, its farms, seafood, dairy, and now producers of wine, small craft beer, and beverages, raising livestock, and local artisan producers highlights what is happening all across this country. That is why I am so delighted to share my community of year-round friends in the Hamptons. My viewers are able to take away a lifestyle that is good for you for their own daily experiences. There will never be any ‘throwdowns’ or ‘restaurant disasters’ on my show. It’s about inspiring, and education through a visual food experience; hence my last line in each episode is “if I can do it you can do it.”
