Gumbo Time

A good gumbo takes time; a great gumbo takes longer…

Nothing is more satisfying than a hearty bowl of Gumbo, whether a stew or a soup-like dish. It reminds me of Mardi Gras and Carnival on Tuesday, March 1st—Fat & Shrove Tuesday. 

Gumbo is Cajun and Louisiana's official state dish, celebrating their heritage of sustenance off the land. On several occasions, I have been part of an actual Cajun 'Gumbo' party, an all-day outdoor celebration. There is nothing like cooking a gumbo with a little outdoor flavor—especially if the meats or vegetables have been pre-grilled or smoked before being added to the gumbo pot. 

Numerous ingredients can be added to a gumbo, but it's really all about utilizing what’s on hand. Chicken and duck are the usual meats, as are ham and smoked sausage. A seafood gumbo can contain shrimp, crab, and oysters. However, the basic ingredients used in any gumbo are the “holy trinity” of onion, celery, and green peppers, thickened with a dark roux.  

A FAT TUESDAY FAVORITE

Additionally, the make-up of a Cajun Gumbo is the use of heritage ingredients such as the African vegetable okra and the cooking influences of local Choctaw Indians, French, German, and Spanish settlers. The addition of tomatoes is more Creole and not of Cajun influence. Adding tomatoes with all the other ingredients in the gumbo pot provides a wonderful mix of culture and full flavor. With Louisiana's rich culture, it is essential to note that preparing a gumbo goes far beyond the making of this ‘stew’ and brings together the community.  

This new kind of gumbo may just be stepping back to the Cajun way, with everyone contributing to the pot for the goodness of the stew. Laissez les bons temps rouler!

This full-flavored gumbo is a lighter version than the Cajun traditional, yielding to the heavier butter and flour versions, making a more traditional stew or soup. However, the basics of broth and rice hold true, and the rest is up to you. Make it seafood with crab, shrimp, or crawfish, or with chicken, duck, or vegetables.

George's Gumbo

Makes six servings

2 Tablespoons olive oil

1 pound boneless chicken thighs, diced

1/2 pound smoked sausage (chorizo or kielbasa), chopped

1 large onion, chopped

1 green bell pepper, chopped

3 green onions, chopped

1 rib celery, chopped

1 cup okra, fresh or frozen, sliced

6 cloves garlic, chopped

2 cups canned whole tomatoes, chopped

4 cups chicken broth

1 teaspoon each, oregano, thyme, sage

1 Tablespoon fresh parsley

1 Tablespoon hot sauce, or more to taste

2 teaspoons gumbo file powder, dissolved in 1/4 cup chicken broth (for thickening)

Fresh ground black pepper

Optional: 

1 pound large (26-30) size shrimp, peeled & devened, save shells for broth

2 cups cooked steamed white or brown rice

Heat a large soup pot to a medium temperature. Add the olive oil, chicken, and smoked sausage. Add the onion and cook until a light golden color, stirring occasionally. Add the green bell pepper, green onion, celery, and garlic; cook for 2 minutes. Add the canned tomatoes, chicken broth, parsley, oregano, thyme, sage, hot sauce, and fresh ground black pepper. Bring the soup to a boil and then simmer for 30 minutes. Add the okra and gumbo file. Simmer for at least an additional 35 to 45 minutes. Additional slow simmering time will intensify the flavors.

Before serving, add shrimp and cook for 5-8 minutes until done. 

Serving suggestion: Serve with a scoop of steamy hot rice

Note: If using shrimp, cook shrimp shells in chicken broth for ten minutes to extract additional flavor, strain shells, and use broth.

Potato dishes are comforting and crowd-pleasing. They are a great side dish and can easily be turned into a main. This month, it is timely to celebrate the tradition of Ireland with another favorite. 

This comforting traditional Irish dish of potatoes and cabbage was more or less created from the plentiful supply of potatoes and cabbage in 18th-century Cork, Ireland. Colcannon is similar to the English's bubble and squeak; only the potatoes are mashed. The other key ingredients were fresh milk, freshly churned butter, and onion. This is a good side dish that can be made quickly with leftover potatoes and cabbage. Serve with smoked ham or corned beef.

Colcannon (potatoes with cabbage)

serves six-eight

2 pounds red skin potatoes, cut into small pieces

1 cup milk, hot 

6 Tablespoons butter

1 cup sweet onion, chopped

1/2 cup leeks, white and pale green only, chopped fine

6 cups green cabbage, finely shredded and braised in corn beef (or chicken) broth

Freshly ground pepper, to taste

Boil potatoes for about 15-20 minutes or until tender. Drain and mash potatoes with skins on, adding the milk.

While the potatoes are cooking, melt 3 Tablespoons of butter in a large saute pan. Add the onion and leeks; cook until translucent. Add the cabbage and cover; cook for at least 5 minutes or until desired tenderness. *Combine the cabbage and onion mixture into hot mashed potatoes. Season with fresh ground black pepper. Top each serving with a teaspoon of butter.

* OPTIONAL: add 1 cup of cooked chopped corn beef or ham.

It's that time of year once again. Doesn't it feel like Groundhog Day was just yesterday? Those of you who know me know it's my favorite holiday tradition of the year. I love the excitement of the anticipated sign of spring from the Seer of Seers, Punxsutawney Phil, on February 2nd each year. Who would believe the little weather-predicting rodent would be 75-90 percent accurate. How about that! I'd say that's more predictable than any certified meteorologist. 

However, I really feel Groundhog Day took on an all-new meaning years back after watching Bill Murray in the movie Groundhog Day. Imagine eating all the pancakes and donuts you like and repeating them the next day and the next.

So, in honor of Punxsutawney Phil and Bill Murray, here's my Punxsutawney Pancakes Recipe. Hearing the alarm clock at 6 AM on Groundhog Day just isn't the same without a tall stack of pancakes and a carafe of good coffee to wake up to. Just be sure to serve with a good maple syrup. Or, try a slice of my Egg Custard Pie (recipe below) for another sweet celebration.

Wishing you a Happy Groundhog Day this upcoming weekend! May my Punxsutawney Pancakes become a tradition at your breakfast table as well. 

George's Punxsutawney Pancakes

Makes eight pancakes

1 1/2 cups all-purpose flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 Tablespoon pure cane granulated sugar

* 1 1/4 cups buttermilk

1 teaspoon vanilla

1 egg, beaten

3 Tablespoons butter, melted

* To make Buttermilk 

1 scant cup whole milk 

1 tablespoon white vinegar or lemon juice 

To make buttermilk:

Measure 1 scant cup of milk. Stir in 1 tablespoon of lemon juice or white vinegar.

Let the mixture stand at room temperature for 5 to 10 minutes. When it is ready, the milk will be slightly thickened and you will see small curdled bits. This substitute will not become as thick as regular buttermilk

Mix all dry ingredients in a large bowl well with a whisk: the flour, baking powder, salt, and sugar. In a separate bowl, mix all wet ingredients: the buttermilk, vanilla, egg, and melted butter.

Add the wet to the dry and stir with a spatula until the dry ingredients have incorporated. There may still be a few lumps. Do not over-mix, or pancakes will become tough.

Preheat a nonstick pan or lightly grease a griddle over medium-high heat at 375 degrees F. 

Tip: Test the temperature by dropping a drop of water on the surface of the pan. Water will dance across the surface when at the correct temperature. Test one pancake.

Pour one 1/4 cup scoop of batter onto the griddle for each pancake. Add any fresh fruit, such as bananas or blueberries, at this time. You will see bubbles form on the top side when brown on the bottom, flip, and brown on the second side.

Serve hot with syrup or your favorite topping.

The egg itself, like a seed, is a symbol of the potential of life. In ancient times, the egg was a symbol of the universe, creation, and, in some cultures, luck, wealth, and health. 

What's equally as good with high tea, sparkling wine, or frosty beer at a tailgate? I have an egg of an idea - the deviled egg. It's one of those hors d'oeuvre platters that spans the occasion ladder from high brow to low brow, which always empties fast because it is so difficult to have just one.

The name deviled implies hot but need not be. It is simply hard-boiled eggs chilled and halved with the yolk whipped into a flavorful filling of a wide variety of flavors such as mayonnaise, sour cream, yogurt, Dijon mustard, etc. You can even spice it up with a touch of cayenne, hot sauce, or wasabi. Use a touch of fresh herbs like dill, cilantro, or chives; it's a nice touch. Make special occasion up-end garnishes such as chopped prosciutto, crisp chopped pancetta, or with a sliver of smoked salmon, sour cream, and caviar.

Glühwein Recipe

Many German town centers have street markets during the Christmas season, with stalls selling cookies, arts and crafts, wooden toys, and other festive items. Almost every street corner seems to boast Bratwurst and Glühwein stalls. Light a roaring fire and pour yourself a small glass of warm, spicy red wine. Below is a basic recipe, but vendors in Germany will offer additional flavorings, such as elderberry cordial or a shot of dark rum. At home, spike it, too, if you choose.

Heat your Glühwein in a large saucepan on the stove or in a large jug in the microwave, but don't let it boil, or the alcohol will evaporate. If you want a less alcoholic drink, mix in apple juice or water.

Glühwein Recipe

Makes 6 servings

1 bottle of full-bodied red wine

1 small lemon

6 orange slices

10 cloves

3 cinnamon sticks

4-6 Tablespoons sugar

3 ounces brandy

Preparation

Pour the wine into a large saucepan. Cut the lemon into quarters. Stick the cloves into the rind of one quarter. Slice the rest thinly. Add the lemon quarter and orange slices to the pan with the cinnamon and sugar. Heat slowly until hot, but do not allow to boil. Add brandy and serve in heatproof glasses or small cups. Place a metal teaspoon in the glass before adding the hot liquid to prevent the glass from breaking.
