Enjoy a lighter version of mashed potatoes by cooking with a flavorful chicken broth and olive oil. Cutting out much of the dairy's heaviness and adding chicken broth makes this do-ahead recipe ideal for weeknight suppers and equally good for weekend entertaining.

Mousseline Potatoes

makes 6 servings

10 large Yukon Gold potatoes, peeled and diced into small pieces

1 cup chicken broth, hot

4 Tablespoons extra virgin olive oil 

6 cloves garlic, chopped fine

3/4 cup cheddar cheese, shredded

4 Tablespoons Parmesan cheese

Black pepper and Sea salt, to taste

¼ cup fresh chives, chopped

Optional: ¼ cup cooked and finely chopped ham or pancetta

Place potatoes in a large pot and cover with cold water. Bring to a boil, lower the heat to a simmer, and cook the potatoes until very tender, about 20 to 25 minutes.

Meanwhile, in a separate small pot, add garlic to the chicken broth and simmer for 5 minutes to infuse the broth's garlic flavor. Optional: strain off the garlic.

Test the tenderness of potatoes by slipping the point of a small knife into a potato. The potatoes are done if the knife slips out easily—drain water when potatoes are tender. After draining, return the potatoes to the hot pot, add 2 Tablespoons olive oil and ½ cup chicken broth, and mash potatoes by hand or with an electric mixer. Add ¼ cup cheddar cheese and Parmesan cheese. Mix in and add 2 more Tablespoons of olive oil. Continue to mash until the desired level of smoothness. Add remaining cheese, chives, black pepper, and sea salt to taste.

If preparing potatoes ahead, cool and refrigerate until ready to use.

Preheat a broiler or oven to 450 degrees F.

Grease an ovenproof 8 x 11 casserole dish with olive oil. Add potatoes and spread out evenly, leaving ridges on top. Top with an additional ¼ cup cheddar cheese, parmesan cheese, and 2 Tablespoons olive oil.

Place under broiler and heat until potatoes are bubbly and golden on top. If the potatoes were made fresh and hot, the time would be approximately 3-5 minutes. If prepared ahead and the potatoes are cold, bake for 20-25 minutes or until hot and golden on top. 

Serving suggestion:

Upgrade potatoes from a savory side dish to a satisfying main dish by adding your own twist. Start by pacing seasoned cooked ground beef chili, pulled chicken, or braised vegetables in an ovenproof casserole or ramekin. Top with the prepared potatoes for British-style shepherds or cottage pie. Served alongside my Oven-Fried Garlic Chicken.

Autumn is here, a time of cooler days and crisp nights. Short days with less daylight are a primer for comfort foods. So, for those seeking comfort, Mac & Cheese might be the most popular comfort food on tonight's menu.

Macaroni and cheese is simple to make, and the secret is to use a mixture of good cheeses.

George’s Classic Jack Mac

Makes 6 servings

2 Tablespoons Butter

1 onion, chopped

6 cloves garlic, chopped

2 Tablespoons all-purpose flour

4 cups chicken broth

2 bay leaves

1 teaspoon fresh thyme

1 teaspoon hot sauce

pinch freshly grated nutmeg

2 cups half & half

1 cup sharp cheddar cheese, shredded

1/2 cup Jack cheese, shredded

2 Tablespoons Parmesan cheese, grated

2 Tablespoons fresh cilantro, chopped

1 1/2 pounds uncooked elbow, shells, or other small pasta

Melt Butter in a large soup pot or saucepan. Add onion and garlic and sauté for 1 minute. Add the flour and cook for 1 to 2 minutes, stirring constantly. Slowly add the broth and bring it to a boil. Lower the heat, add the bay leaves, thyme, and hot sauce, and simmer for 10 minutes. 

Stir in the half & half and heat to a simmer. Slowly add the Cheddar, Jack, and Parmesan cheeses, stirring until they melt and the sauce is smooth. Stir in the cooked pasta. Place in a serving dish and eat immediately, or sprinkle with Mac Topping (optional), and bake for five minutes in a 350-degree oven. See More Below

Perfect Combo, Mac + Oven Fried Chicken

For the Mac Topping

4 Tablespoons butter, melted

6 Tablespoons bread crumbs

2 Tablespoons Parmesan cheese, grated

1 Tablespoon fresh parsley, chopped

Fresh ground pepper, to taste

Place all ingredients in a bowl and mix well.

Summer Flavor Winter Wonder

You can make magic with a simple eggplant, squash, and tomato. Layers of flavor come together to create this meatless wonder. And the gratin only tastes better the next day.

Eggplant Squash Gratin

Makes 4 - 6 servings

Slice the peeled eggplant and squash lengthwise. Coat lightly in flour. Sear in olive oil with a few whole garlic cloves. Turn the eggplant and squash when they are light brown, and remove. Cool. Slice tomatoes thickly. Layer vegetables in an ovenproof casserole, lightly oil, and layer eggplant, squash, and tomato; repeat using up the remaining vegetables—optional parmesan can be added between layers. Place whole sautéed garlic on top of the layered vegetables, sprinkle with fresh, ground breadcrumbs, parmesan cheese, basil sprigs, and chopped parsley, and drizzle with olive oil on top.

Bake at 375 degrees for 15-20 minutes. Serve warm or cold.

A frittata is like a quiche, but it doesn't have a crust. Mix in some chopped prosciutto, shredded cheese, or pre-cooked seafood or chicken, and it becomes a tasty brunch dish, appetizer or starter. or, add fresh herbs for a veggie morning start.

Fresh Herb Frittata

Makes six servings

1 Tablespoon olive oil

10 eggs, well beaten

2 Tablespoons water, optional  

1/4 cup pancetta 

4-6 each baby Yukon potatoes 

1 shallot or 1 Tablespoon sweet onion 

1 green onion 

1 Tablespoon fresh basil, chopped

1/2 cup fresh mozzarella, sliced into small pieces  

1/4 teaspoon hot sauce

fresh ground black pepper

Pre heat a large oven proof sauté pan. Preheat oven to 350 degrees. 

Beat eggs with water, basil, parmesan cheese, hot sauce, nutmeg, and pepper. 

Add olive oil to sauté pan, cook pancetta until slightly tender. Add shallot and potatoes cook until potatoes are tender. 

Add pepper and hot sauce to eggs. Pour eggs over the filling and place the pan over medium heat. Stir egg mixture 2-3 times or just enough to mix eggs and potatoes. When the eggs begin to set, lower the heat and cook on medium heat for 3-4 minutes, top with fresh mozzarella and green onion. 

Cover or place pan in oven for additional 1-2 minutes or until firm yet moist. 

Top with fresh basil. Serve warm or room temperature.

Love fondue, but not a fan of double dippers? The solution, my individual mini-fondue servings, will satisfy the creaminess of the cheese and wine sauce.

Serving a variety of crisp, colorful veggies makes for a healthier spin on the traditional fondue. The vegetables and bread can be prepared ahead, while the fondue sauce is a quick sauce prepared and served immediately. Topped with a zesty pesto cuts the heaviness of just serving an all cheese sauce.

Fondue with Sweet English Spring Peas & Garlic Scape Pesto

Sauce serves 6-8

4 Tablespoons Garlic Scape Pesto, or my Perfect Pesto or Winter Pesto when scapes are out of season

1 cup dry white wine

½ pound Swiss Emmenthaler or Emmental cheese, shredded

½ pound Gruyere, cheese, shredded

2 Tablespoons flour  

Pinch fresh grated nutmeg and sea salt

Fresh grated black pepper

Serve with assorted crisp vegetables such as string beans, spring peas, tomatoes & slices of crusty bread. 

Prepare ahead an assortment of vegetables and sliced bread and arrange in small ramekins. 

Mix flour with shredded cheese.  

Immediately before serving, gently simmer wine in a small saucepan. Add Swiss cheese, Gruyere cheese a little bit at a time until blended into the wine. Keep gently stirring after each addition of cheese until completely melted. When all the cheese has melted, add nutmeg, salt, and pepper. Ladle a small amount into each ramekin. Top with a small spoon of pesto. Serve immediately.

Tips: 

- Use well-aged or moist grating cheeses for optimum flavor and texture of the sauce 

- Caution: Cook at low heat with a gentle simmer, do not boil the cheese sauce 

- To avoid over stringiness of cheese, do not over stir
